Spice Kitchen is a family business from Liverpool that began in 2012, when Shashi suggested selling the blends she had been making for years and her son Sanjay agreed to try it over one Christmas.

What they sell

The best known product is the spice tin — a masala dabba filled with whole and ground spices, supplied with a small recipe book, which is the traditional Indian way of keeping the spices you reach for every day in one place. Beyond the tins there are hand-blended masalas and rubs sold singly and in giftable trios, recipe and feasting kits, loose leaf teas, spiced hot chocolate and chocolate, cookware and cookbooks. Several blends have won Great Taste awards, and the tins have twice taken Gift of the Year.

Why fresh spices taste different

Ground spice loses its aromatic oils steadily once it is milled, which is why a jar that has sat in a cupboard for two years tastes of dust rather than of anything in particular. Buying in smaller quantities more often is the whole point of a tin: you use it, you refill it. Whole spices keep much longer than ground ones, so where a recipe allows it, toasting and grinding cumin or coriander yourself makes a bigger difference to the finished dish than almost anything else you could change.

Storing and cooking with them

Keep spices away from heat, light and steam — the cupboard above the hob is the worst place in the kitchen, however convenient it is. Bloom whole spices in hot oil at the start of a dish and add ground spices later with a splash of liquid, because ground spice burns quickly in dry heat and turns bitter. If you are buying as a gift, the tins are heavy and handsome and travel well, and the trios suit someone who already has a full spice rack.

For a first order, the tin is the obvious buy if you cook from scratch a few times a week, and the blend trio is the better one if you already have a full rack and want something you would not mix yourself. Refills are sold separately, which is the point of the format and the reason it works out cheaper over a couple of years than replacing supermarket jars that were stale before they were opened.
